~Amanda~

As you should all know by now, I have the biggest sweet tooth. I firmly believe the best sweet (and food in general) in the entire world is chocolate and I live by the notion that a little bit of chocolate every day is good for the soul… and for your health! However, there are times when a little piece of chocolate just isn’t enough and won’t satisfy my cravings, so when I want to get that extra dose of chocolate (while not feeling like I’m being super un-healthy) I make this Chocolate Avocado Banana Pudding! It is made with a bunch of good-for-you ingredients, it has the most incredible chocolatey flavor, and a silky smooth texture reminiscent of the best and richest puddings. What’s not to love about that?!

Now you’re probably thinking AVOCADO PUDDING?! That doesn’t sound appetizing at all…and that was my first thought when I started making this pudding years ago, but I was completely wrong. When you combine the avocado with all the other ingredients there is no weird avocado taste, just the great smooth and creamy texture and all health benefits of it. And boy are there great health benefits to avocados; they can help lower cholesterol, prevent cancer, promote a lower body weight, tackle belly fat, and so many other things. So of course using avocados as a base for this delicious pudding is genius because you know you’re actually eating something healthy!

There are several ingredients that make this pudding taste amazing when added to the avocado base; Cocoa powder is the most important, obviously, since we’re making chocolate pudding! Bananas add to the smooth creamy texture and bring in a hint of banana flavor, which pairs perfectly with chocolate. I love to use agave as a sweetener, as I do in many ‘desserts’ that I make… You need something sweet to offset the bitterness of the cocoa powder while still being nutritional, and agave is perfect. It’s significantly lower on the glycemic index than other sweeteners (natural and artificial) and makes it a much healthier alternative to those other sweeteners. I also love to add in some cinnamon for a little kick of flavor and almond or coconut milk to thin it out a bit. This is honestly some of the best (and almost guilt-free) pudding you’ll ever have and it will satisfy the biggest chocolate cravings! Jackie and I have been making it for years and are hooked on it!
