Every month I look forward to getting my Food & Wine magazine in the mail – it is the last actual paper magazine I still subscribe to and there’s something so great about relaxing on the couch on a Saturday morning with my coffee and flipping through pages of new recipes and getting food inspiration. No, this is not a plug for Food & Wine, I just really like the magazine and my monthly routine. My favorite issue of the year is almost always the holiday issue because I usually end up finding some awesome recipe inspiration for new holiday treats. This year did not disappoint; there were so many great recipes that I tested out and my favorite ended up being these Matcha White Chocolate Crispy Treats! I only made a few small alterations to the recipe, and it’s absolutely amazing!



I think pretty much everyone loves rice krispie treats – homemade rice krispie treats to be clear, not those over processed ones in the blue packages (no offense, but when it comes to rice krispie treats, nothing beats homemade). I mean what’s not to love?! Marshmallows, Butter, Rice cereal, and that ooey-gooey texture… the only thing that could possibly make them better is the addition of white chocolate and sea salt (sweet and salty desserts are always a winner in my book) and matcha powder. I always have a packet of matcha powder in my kitchen and I usually use it in smoothies, lattes or my Matcha Overnight Oats. I highly recommend you have it stocked in your pantry too; it is packed with antioxidants, it boost metabolism and burns calories, detoxifies naturally and even helps to calm the mind and relax the body. Obviously Rice Krispie treats are the farthest thing from healthy, but it is nice knowing there’s a little something in these ones that’s actually good for you! Plus the green color makes these a perfect Christmas treat!


Making crispy treats is fairly simple, but it can get a little sticky and messy! The first step is to melt the butter then add the marshmallows to it to melt. One of the most important things to know when making these is that the lower the heat and the longer you take to melt the marshmallows, the softer and more gooey they will be – nobody like a hard rice krispie treat. Next add in the matcha powder, then the rice krispies and stir until everything is combined and you have a big sticky mess. While the mixture is still warm add in the white chocolate chips and salt. You will want to stir them in pretty quickly so they melt into the mixture so you don’t have a bunch of lumps. Once everything is combined, you spread it in your pan and sprinkle with some more matcha powder. When they’re firmed up, slice them into whatever size you want and drizzle with more melted white chocolate and sprinkle with some green sprinkles for some added holiday cheer. Now get ready and go make them so you can take a bite of the best crispy treats you’ve ever had! ENJOY!

Ingredients
  1. 5 tablespoons unsalted butter, sliced, plus more at room temperature for brushing
  2. 1 pound marshmallows
  3. 8 ½ cups crisped rice cereal
  4. 1 ½ cup white chocolate chips
  5. 1 teaspoon flaky sea salt
  6. 3 tablespoons matcha tea powder
Instructions
  1. Brush a 9-by-13-inch baking dish with butter (or spray with non-stick cooking spray).
  2. In a large pot, melt the 5 tablespoons of butter over medium-low heat.
  3. Add the marshmallows and melt, stirring with a wooden spoon, until completely melted, about 5 minutes (the slower you melt them, the softer your bars will be).
  4. Remove the pot from the heat, add 2 tablespoons of matcha powder and stir to combine.
  5. Add the cereal and stir to coat the let the mixture stand until cool to the touch, about 2 minutes.
  6. Working quickly, fold in 1 cup of the white chocolate chips and salt until just melted.
  7. Scrape the 
mixture into the prepared baking dish and press into an even layer (spray your hands with non-stick spray if it’s too sticky) and sprinkle with the remaining matcha powder.
  8. Let stand at room temperature until cool, about 
45 minutes then cut into desired size.
  9. Optional: melt the remaining ½ cup of white chocolate chips in the microwave for about 30 seconds and then drizzle over the tops of the treats.
  10. Enjoy right away or store in an airtight container for up to 5 days.
