The minute that I tried the Starbucks Sous Vide Egg White Bites, I knew that I was hooked! This was the first ‘breakfast’ item on the menu that was gluten-free, delicious and satisfying – not to mention they are pretty low cal too, only 170 calories for two. I ate them at least weekly (sometimes several times a week) for months and months and eventually realized I was probably spending way too much money on something that I could learn to make at home for much cheaper. The only problem was that I didn’t have a Sous Vide machine, but luckily Christmas was right around the corner and my father-in-law nailed it by gifting me one of my own! It was time to get recipe testing… 

There are a ton of ‘copycat’ recipes out on the internet and it took me many tries to get my recipe perfect. I will say that while my version is absolutely delicious, it’s still not exactly the same as Starbucks, they have to have some secret ingredient or method I just can’t quite nail down. Mine satisfy my Egg White Bite cravings 99% of the time, but I’ll probably still catch myself getting the real version on occasion. So what makes these bites so delicious?! Let’s start with the ingredients; they have egg whites (obviously), cottage cheese, Monterey Jack cheese, roasted red bell peppers, spinach, feta, green onion, hot sauce and the “secret” ingredient – rice starch! I ordered THIS ONE on Amazon because I couldn’t find it in store. 

To make them, I slightly whisk the egg whites in a bowl, add the remaining ingredients and stir it all together. So easy! The next step is to pour the mixture into six glass jars – I use 4 ounce glass mason jars with lids. Once the mixture is in the jars, you want to put the lids on but you have to make sure they are just sealed and NOT too tight. You want to make sure that any steam can escape from the jars otherwise you risk them exploding. Now you place them in your pot of water (don’t preheat the Sous Vide before), turn the Sous Video to 172 degrees and let them cook for 75 minutes!

Once the egg bites are done cooking, I remove them from the water using a slotted spoon and let them cool for about 5 minutes. At that point, I use pot holders to remove the bites from the cups and place them on a greased (or parchment lined) baking sheet and pop them under the broiler for 4 minutes until the tops get crispy and golden brown – just like at Starbucks! This step is optional, but I think it really helps to make the bites sooo much better. That crispy texture on top is perfect combined with the melty, smooth insides. Excuse me while I go get myself one, I’m drooling just thinking about it!

Ingredients
  1. 6 egg whites
  2. 1/4 cup cottage cheese
  3. 1/4 cup shredded Monterey Jack cheese
  4. 2 tablespoons crumbled feta cheese
  5. 1 roasted red bell pepper, finely diced
  6. 1/4 cup spinach, finely diced
  7. 2 green onions, finely diced
  8. 1 teaspoon rice starch
  9. 1 teaspoon hot sauce (I use Cholula)
  10. Supplies: 6, 4 ounce mason jars with lids and a sous vide machine
Instructions
  1. Grease 6 4oz mason jars with nonstick cooking spray.
  2. In a medium bow, whisk the egg whites with a fork for about 30 seconds until slightly frothy.
  3. Add all the remaining ingredients and mix until well combined.
  4. Divide the mixture evenly between the 6 mason jars.
  5. Place the lids on the jars, making sure they are loosely sealed (you want to make sure any steam can escape so there is not a risk of the jars exploding).
  6. Place the jars in the pot with your sous vide machine.
  7. Turn on the machine and set the temperature to 172 degrees.
  8. Cook for 75 minutes.
  9. When they are done cooking, remove the jars from the water using a slotted spoon and place on a wire baking rack to cool.
  10. Use oven mitts to remove the lids from the jars.
  11. Set your oven to broil.
  12. Line a small baking sheet with parchment paper (or grease with nonstick cooking spray) and remove the egg bites from the jars and place on baking sheet.
  13. Place under broiler for about 4 minutes until the tops are golden brown and crispy (keep a close eye on them so they don't burn).
  14. Remove from oven, let cool for a few minutes and enjoy or place back in the mason jars to store in the fridge until you're ready to eat.
  15. When you're ready to reheat, place them in the microwave for about 45 seconds until heated through.
