Method
For the Cake
- Preheat oven to 350 degrees and line a pie/cake pan with parchment paper (NOT wax paper).
- Combine the flour, cinnamon, and baking soda in a large bowl.
- Mix in the pumpkin puree, coconut oil, honey, water, and vanilla.
- Stir in the apple cider vinegar.
- Pour the mixture into your prepared pan.
- Bake for 50-60 minutes. Allow cake to cool.
For the Frosting
- Stir all ingredients together in a large bowl.
- Spread on top of the cake and sprinkle with extra coconut.
