Method
Make the Strawberries
- Preheat oven to 350F and line a large baking sheet with parchment paper.
- Slice the strawberries and place in a large bowl.
- Combine the balsamic vinegar and honey together with a fork and pour over the strawberries.
- Spread the strawberries in an even layer on the baking sheet.
- Place in the oven to roast for about 30-35 minutes to soften.
Make the Whipped Feta
- In a food processor, combine the feta cheese, Greek yogurt, olive oil, and pepper - blend for a few minutes until smooth, scraping the sides with a spatula as needed. Transfer to a bowl and place in the fridge to chill for 30-60 minutes.
- When strawberries are done roasting, remove them from the oven and allow to cool for 5-10 minutes. Transfer them to an airtight container (with all the juices from the pan too) and chill in the fridge until ready to serve.
Serve It Up
- Place the whipped feta in a large bowl, top with the roasted strawberries and sprinkle with some fresh basil and a drizzle of olive oil.
- Serve with toasted crusty bread, crackers, fruits and / or veggies for dipping.
