Brunch. It’s probably one of the best parts of every weekend. It’s always so much fun to go out and have some amazing food, refreshing cocktails, and good times. However, I would argue that Sunday morning brunch at home on the couch while watching football (or Food Network if I’m lucky) with Conor is even be better than going out. I love being able to lounge around in the morning and still be able to enjoy a restaurant worthy brunch at home. My all-time brunch favorite has always been Bagels and Lox, and now that I’m gluten-free, Omelets and Lox (because gluten-free bagels just aren’t the same). When I know we’re going to be home and I want an amazing brunch, I plan ahead to make sure I have all of these ingredients at home and ready to go.

Smoked salmon is one of my favorite foods. I just love how indulgent it is with its fresh and salty flavor profile. It’s very important to buy good quality smoked salmon, make sure you’re buying a fresh, not farm raised or imitation, salmon. I usually buy the ones that come from Norway and have never been disappointed. Smoked salmon is such an excellent source of protein (with 15 grams in every 3 ounces), several vitamins, and heart-healthy fats. It’s the perfect food to start off your day with.

In this dish, the salmon is complimented by the fresh veggies, refreshing cream cheese, tangy capers, and zestiness of the lemon on top of a scrumptious bagel. If you’re going gluten free, or just want a lower carb option, you will not be disappointed with an omelet rather than a bagel as a base for your smoked salmon. I make my omelets with just one egg and one egg white and fill it with some of the veggies and cream cheese that you would use on the bagels. Once the omelet is complete, I top it with the smoked salmon and other bagel toppings. I honestly don’t even feel like I’m missing out on the bagel this way because the omelet with smoked salmon on top is so enjoyable.

Ingredients
  1. 2 bagels (any kind)
  2. 1 package smoked salmon
  3. 4 ounces cream cheese
  4. 1 tablespoon capers
  5. 2 lemons
  6. 1/4 red onion, thinly sliced (diced for gf omelet)
  7. 1/2 roma tomato, thinly sliced (diced for gf omelet)
  8. 1/4 cucumber, thinly sliced
  9. 2 green onions, sliced
  10. 2 eggs (1 full and 1 white) for omelet only
For the bagels
  1. In a small bowl comine the cream cheese, capers, and juice of one lemon. Toast the bagels and spread cream cheese on each half. Top bottom half of bagel with onions, tomatoes, cucumbers, and salmon. Sprinkle with capers, green onion, and a squeeze of lemon juice. Top with other half and enjoy!
For the GF omelet
  1. Heat a medium skillet over medium heat. Spray with cooking spray or butter. Mix eggs together in a bowl and pour into the skillet. Sprinkle the onion, tomato, and cubes of cream cheese onto the eggs. Fold omelet in half. When done cooking, top with tomato, onion, cucumber, and salmon. Sprinkle with capers, green onion, and a squeeze of lemon juice.
