Summer weather has arrived and BBQ season is upon us. This is my FAVORITE time of year… I love spending nights outside on the patio, eating dinner, relaxing and just enjoying life. Although things are a little different this year and we’re not gathering in big groups like we’re used to, we are still finding ways to have some fun socially distanced dinners with friends and family. Lately, these have been informal and casual and I love to have a simple appetizer that I can make to bring for everyone to enjoy. And that’s where the inspiration for this amazing Summer Corn Salsa came from.

This salsa is quick and easy to make, it’s super delicious and loaded with fresh summer flavor and everyone I’ve made it for absolutely loves it. It’s also really easy to make a big batch and separate it into mini serving dishes so that everyone has their own little bowl and you don’t have to worry about germs spreading from people sharing. So what makes this salsa so delicious? First, Corn! Fresh corn off the cob is going to get you the best flavor especially when it’s in season, but I’ve gone to the store a few times in search of corn on the cob and was so sad to find it was sold out, so I’ve used frozen corn that’s been thawed and dried and it’s just about as delicious!

The corn in sautéed in a pan with some EVOO or Avocado Oil to get it a little charred and crisp (you could also throw the corn cobs on the grill to get this effect too). Once the corn is ready, you dump it in a bowl with the rest of your ingredients; chopped red onion, cilantro and jalapeños. Then your seasonings; lime juice/zest and white wine vinegar give it some tang, chili powder for a little heat, cumin for the warm savory flavor and salt and pepper to enhance all those delicious flavors! Let everything marinate in the fridge for about 20 minutes and then serve topped with fresh avocado cubes (you don’t want to do these earlier because they’ll just turn brown). Enjoy served with tortilla chips and/or some fresh veggies – zucchini or cucumber rounds are a good option. This also saves in the fridge really well for several days if for some crazy reason you don’t eat it all at once. Enjoy!

Summer Corn Salsa

Ingredients
3 cups corn kernels (fresh or frozen that have been thawed and dried)
2 tablespoons extra virgin olive oil (or avocado oil)
1 medium red onion, finely chopped
1/2 cup cilantro, chopped
2 jalapeños, finely chopped
2 large avocados, cubed
2 limes, zested and juiced
1 tablespoon white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
Salt and Pepper, to taste
 
Directions
1. Heat the oil in a large skillet over medium high heat. Add the corn and sauté for about 5-10 minutes until it starts to get golden. Remove from heat and pour into a large bowl. 
2. Add all the remaining ingredients, except avocado, to the bowl and toss to combine. 
3. Cover and refrigerate for at least 20 minutes, then top with avocado right before serving. 
4. Serve with your favorite tortilla chips or veggies (zucchini or cucumber rounds are delish!)
5. Store in an airtight container in the refrigerator for up to 5 days.
