
Peachy Popsicles

- Place all ingredients in the blender and blend until it reaches a smoothie-like consistency (a few remaining peach chunks are totally fine)
- Pour the mixture into your popsicle molds, add in the sticks and freeze for 4-6 hours (if you are using little cups with popsicle sticks, freeze without the sticks for about an hour before putting the sticks in)
- Once they're frozen, remove from molds and enjoy (you may need to run the mold under warm water to loosen the popsicle from the sides)
It’s officially the height of peach season here in Colorado! One of our neighbors was selling peaches for her school fundraiser so I bought a box, not knowing at the time that it was a HUGE box of more peaches than I would know what to do with. I shared some with family members and still had more than enough left for us so this past week I’ve been in peach mode making as many peach recipes as possible. I stuck with some of my favorites like our Summer Peach Crisp, my childhood favorite Peach Chicken and I sliced and froze some for colder months when I love to make our Chipotle Peach Crock Pot BBQ Chicken. But I also tested out some new recipes and a big success were these Peachy Popsicles – I made them with our kids in mind, but I love them so much too!
The recipe is so simple, you combine your fresh, cubed peaches in the blender with banana and yogurt to create a creamy base. You can use any kind of plain yogurt you prefer, but I love a simple low sugar and dairy free Yogurt. The peaches are sweet on their own but I added a little honey on top (you can also sub maple syrup if you don’t have honey or if you’re making these for little ones under 1 year). A little vanilla or almond extract adds to the flavor, but it totally optional too. And finally, I added in some hemp seeds. This has been my go-to ingredient lately, they’re a great extra boost of protein, fiber, vitamins and mineral (I add them to my salads, smoothies, anything really)!
Blend everything together in your blender and get your popsicle molds ready to pour it in. You can find molds in a lot of stores or online. We got these very flashy ones from Ikea a few years ago and my daughter just loves them so we keep on using them haha. If you can’t find any, you can always use some of the mini paper cups with popsicle sticks too! Another note here is that depending on the size of the popsicle molds you have, you may have some leftover mixture – our molds are smaller than most so this was the case for me. You can always freeze it in a different vessel (or paper cups) or you can use it as a base for a smoothie when you’re done!
Freeze the popsicles in the freezer for about 4-6 hours (if you’re using paper cups and putting popsicle sticks in the center, freeze for about an hour first before you put the sticks in so they stay upright). Once you’re ready to enjoy them, you may need to run the mold under some warm water for a few seconds to loosen them up, pop them out and enjoy!
